Yummy Quinoa Salad!

I love quinoa! It's so healthy and it's a great substitute for pasta and heavy carbs. It gives you the feeling of eating a carbohydrate, but it has more protein and less calories. 
I recently made a great quinoa salad and it lasted almost four days...great for lunch and dinner.
It's a great dish to make early on in the week and then it will last you through the whole week. 

How to Make:
1. Cook quinoa
2. Cut up veggies and fruit - red/yellow peppers, green onions, apples {makes it really good}, parsley, cucumber
3. Dressing - lemon, balsamic vinegar, olive oil, cumin, salt/pepper, garlic powder
4. Mix it all together and either serve it warm or put it in the refrigerator to cool. 

Great with chicken and a green salad!
